Coconut Lime Jelly
Refreshing coconut jelly recipe for your sweet tooth
- 400ml coconut milk
- 135g lime jelly
- zest and juice from 2 limes
- 1 mango
- 1 teaspoon of icing sugar
Place the jelly cubes into bowl, add zest and juice from 1 lime and about 150ml boiling water. Leave jelly to dissolve. Add coconut milk and whisk well. Divide the mixture equally among dessert bowl, cover with the clingfilm and chill in the fridge for 6 hours or overnight.
Meanwhile, prepare the sauce. Put drained mango in a blender, add juice and zest from 1 lime, icing sugar and whiz untill puree.
Turn jellies out on the serving plates and drizzle mango sauce over and around each one.
