Coconut Rice


Delicious way to cook rice – The Asian way.

  • 400g Basmati rice
  • 800ml coconut milk
  • 2 tablespoons butter
  • 1 pandanus leaf
  • 1 teaspoon salt

Soak the rice for 1 ½ hour and drain well. Melt the butter in a casserole over a medium heat. Add the rice and cook for 3 minutes. Add the coconut milk, pandanus leaf and salt. Bring to the boil and cook until coconut milk absorbed. Cover with the lid, reduce the heat to minimum and cook for further 12 minutes.
