Coconut Muffin Recipe
Oatmeal Coconut Muffins
- 1 1/4 cups of boiling water
- 2 eggs
- 1 cup sugar
- 1 cup brown sugar
- 1/2 cup of butter
- 1 1/3 cup of self-rising flour
- 1 cup of uncooked oats
- 1 1/2 cup of flaked coconut
- 1 teas of ground cinnamon
- 1/2 teas of salt
Mix water, salt and oats together and leave it stand for 20 minutes. Mix butter and sugar until smooth, add eggs and bet well. Combine flour and cinnamon and stir into creamed mixture. Add coconut and oats and stir well. PPreheat the oven (350 degrees) and prepare (grease) the muffin cups and fill to 2/3 full. Bake for 25 minutes. Remove muffins from the oven and allow to cool.

Coconut Muffins
- 1cup shredded coconut
- 2 cups flour
- 1/2 cup oil
- 1 cup milk
- 1 egg
- 1 tsp salt
- 1 tbsp sugar
- 1 tbsp baking powder
In a medium bowl, mix together flour, baking powder, sugar, and salt. In a small bowl, combine together egg, milk and oil. Add egg mixture to dry mixture (flour, baking powder, sugar, salt) and until moistened. Add shredded coconut.
Preheat the oven (350 degrees) and spoon batter into lightly greased muffin tin, filling each cup 2/3 full. Bake for approx. 15-20 minutes, or until golden brown. Remove from oven, and allow to cool.
