Oatmeal Coconut Muffins
Simple, easy and healthy. What else to say about this recipe
- 1¼ cups of boiling water
- 2 eggs
- 1 cup sugar
- 1 cup brown sugar
- ½ cup of butter
- 1⅓ cup of self-rising flour
- 1 cup of uncooked oats
- 1½ cup of flaked coconut
- 1 teas of ground cinnamon
- ½ teas of salt
Mix water, salt and oats together and leave it stand for 20 minutes. Mix butter and sugar until smooth, add eggs and bet well. Combine flour and cinnamon and stir into creamed mixture. Add coconut and oats and stir well. PPreheat the oven (350 degrees) and prepare (grease) the muffin cups and fill to ⅔ full. Bake for 25 minutes. Remove muffins from the oven and allow to cool.
